I really liked the Vegetarian Epicure by Anna Thomas and the Moosewood Cookbooks in all their incarnations. Do you do dairy? That could help with the protein. I also like Seitan--you can buy it in a little tub like tofu (at whole foods or similar place), but I like it better. Tempeh is fun, also. Soy stuff is good for protein, too, though. Take care.
